Bendakaya kayaras is a South-Indian recipe mainly famous in Karnataka state. It is very easy to prepare this recipe and it takes very less time to cook also.It very yummy to taste and also good recipe to fit for lunch boxes also. While having this recipe it tastes little bit of tanginess, sweetness, spicyness also, it is a combination of all tastes.

Bendakaya Kayaras is healthy and hygienic because here we are using ladys finger as main ingredient and we all of you know about nutrients and healthy benefits in ladys finger, it helps for brain functioning mainly for children’s health. Here we are also using fresh coconut as all of us know it is rich in fiber content it helps cholesterol levels in our body and reduces fat content also.

Generally in South-India this kayaras recipe serves along with hot hot rice by adding a dollop of ghee init Hmmmm. it tastes so so…yummy. And also it is good in idly, dosa, chapati also.

Ingredients:-

  • Bendakaya or ladys finger-1 cup
  • Red chillies-4 to 6
  • Oil
  • Urad dhal-1/2 cup
  • Fresh coconut-1/2 cup
  • Tamarind juice-3 cups
  • Mustard seeds-1 tsp
  • Chana dhal-1/2 tbsp
  • Urad dhal-1/2 tbsp
  • Cumin seeds-1/2 tsp
  • Jaggery or sugar-1/4 cup
  • Hing
  • Curry leaves
  • Turmeric powder
  • Salt

Preparation steps of Ladysfinger Kayrus:-

1.Take a bowl pour tamarind juice add turmeric powder, salt, Jaggery stir it.
2.Now add ladies finger then close the lid and cook it on low flame.
3.Now heat 1 tbsp of oil in a pan add 1/2 cup urad dhal, red chilies fry it till urad dhal turns into golden brown
in colour now switch off the flame.
4.Take a blender add fresh coconut, fried urad dhal mixture, water, little
amount of salt blend into a fine paste.
5.Add this paste into the tamarind juice mix it well.Now heat a tbsp of oil in a pan add urad dhal, chana dhal,
mustard seeds,red chillies stir it until mustard seeds spluttering then add curry leaves, hing then switch off
the flame.Add this mixture into the tamarind mixture stir it.
6.Check ladies finger cooked well or not if ladies finger cooked well then switch off the flame.
7.Serve with hot rice by adding a dollop of ghee.It is good while having idly, dosa, chapati as a side dish.
